From the boat used for the harvest, the fish is then sent to the grading and batching department through isothermic boxes filled up with water and ice with which starts the “cold chain” inside which the fish will be kept during the whole batching and transportation phase, up to the moment when it will reach the destination markets.

It is therefore easy to understand that the freshness of the fish is guaranteed by the promptness of the process that allows the product to arrive at the markets within 24/36 hours.
